postheadericon Easy Peasy Chicken Noodle Soup

With the cooler weather this week I was DYING for some soup. Sooooo I added it to the weekly menu and couldn't wait to make it tonight.  This is the most ridiculously easy soup to make.  I figured I would take a couple pics and give some quick instructions and hope that you too will have some yummy soup to fill your belly.

First, I chopped everything up. This included a couple handful of baby carrots, 1/2 a yellow onion, 6 stalks of celery and 3 chicken breasts. This prep work took about 15 minutes and that's cuz I had monkeys runnin' around.

Next, I put the chicken and onions in the pot with some EVOO to brown. I put a little garlic salt and fresh pepper on top. Once they were browned I added in the other veggies and topped it with water. I threw in 5 bullion cubes (you will want to do this to taste). In a second pot I cooked the egg noodles.

I let the soup do a low boil for the amount of time it took for the water to boil and the noodles to cook in the second pot, about 20 minutes.

Last I poured the noodles into the pot of soup. That's it. Done and Done!

All in all it probably took me about 45 minutes from start to eat. I hope you enjoy.
